Software RAID

I was thinking about creating a RAID 5 server, but I've always wondered what would happen if a disk drive died and I was using software-based RAID; would the system stay up and would I be able to recover just by putting in a new disk? I know you can with hardware RAID, as it just appears to be another disk to the OS, but I'm not sure how it works with software RAID.

Anyone know of/done a recovery with software RAID 5?
